Chicken 65 is South India's most famous appetizer: boneless chicken marinated in yogurt, ginger-garlic, red chili and spices, fried until the edges turn crisp, then tossed in a hot pan with curry leaves, garlic and green chilies. Bold, tangy and unapologetically spicy, it is the plate that disappears first at every table.
The marinade does the heavy lifting. Chicken is left in yogurt, ginger-garlic paste, Kashmiri chili and a blend of South Indian spices long enough for the flavour to reach the centre of every piece, which is why Chicken 65 tastes seasoned all the way through rather than just on the crust.
After frying, the pieces hit a hot pan with curry leaves, sliced garlic and green chilies for a final toss that perfumes the whole dish. We fry to order so it arrives crisp, and we keep the heat honest – this is a starter meant to wake up your palate before a biryani or a curry.
