Our Vegetable Biryani uses the same dum method as our chicken biryani, so it is a real biryani rather than spiced fried rice. Seasonal vegetables are cooked in a yogurt and whole-spice masala, layered with par-boiled basmati, saffron milk, fried onions, mint and coriander, then sealed and slow-cooked until every grain is fragrant.
Vegetarian biryani is too often an afterthought. We treat it as its own dish: the vegetables are cooked separately in a yogurt masala so they keep their texture, and only then are they layered under rice that has been boiled part way and finished in the sealed pot.
Saffron milk, crisp fried onions and fresh herbs go between the layers, and whole spices – cardamom, cloves, bay leaf, cinnamon – perfume the rice as it steams. Served with raita, it is a complete vegetarian meal and a reliable choice when part of your table eats meat and part does not.
Mix gently from the bottom up so the darker, spiced grains come through, and add raita as you go. If your table also eats meat, order it next to our Hyderabadi chicken biryani.
Add medu vada as a starter, or a masala dosa for the table when you want variety across the meal.
