Medu Vada are golden, doughnut-shaped fritters made from ground urad dal, seasoned with black pepper, ginger, green chili and curry leaves. Crisp and crackling on the outside, soft and airy within, they are the snack South Indian tea rooms are built around. We fry them to order and serve them hot with sambar and coconut chutney.
The secret to a good vada is in the grinding. Urad dal is soaked and ground to a thick, aerated batter with very little water, then whipped until it is light enough to float. That air is what gives medu vada its fluffy centre rather than the dense, oily texture of a poorly made fritter.
We season the batter with crushed black pepper, fresh ginger, green chilies and curry leaves, shape each vada by hand and fry it only when it is ordered. Dropped into sambar or dipped in coconut chutney, it is the South Indian snack Edmonton guests keep adding to the table at the last minute.
Eat one straight away while it still crackles, then let the next one sit in the sambar for a moment to soak it up – that is sambar vada. Pair it with idli sambar for the classic tiffin plate.
