About Our Plain Dosa

At Nitara we treat the plain dosa as a test of the kitchen. With no filling to hide behind, everything depends on the batter – the ratio of rice to urad dal, how long it ferments and how evenly it is spread. Ours is ground in house and rested until it develops the gentle sourness that gives a dosa its character.

Each dosa is cooked to order on a seasoned griddle until the underside turns deep gold and the edges lift away on their own. It is served hot with sambar and chutneys so you can dip, scoop and eat it the way families across Tamil Nadu, Kerala and Karnataka do at breakfast and dinner alike.

How to Enjoy Plain Dosa at Nitara

Break off a piece, dip it into the sambar and follow it with coconut chutney – the mild crepe is a canvas for both. If you would like something more filling, our masala dosa adds a spiced potato filling to the same batter.

Plain dosa pairs beautifully with a bowl of sambar, and many guests add medu vada or idli to build a classic South Indian tiffin platter.
