About Our Kerala Fish Curry

A Kerala fish curry lives or dies on balance. Tamarind (or kudampuli-style souring) has to meet the sweetness of coconut and the heat of red chili without any one taking over. We cook the gravy first, let it settle, and add the fish only at the end so it poaches gently and stays in whole pieces.

Mustard seeds, shallots, ginger and curry leaves are tempered in oil and folded through, which is what gives the curry its unmistakable coastal aroma. Served with steamed rice, it is one of the most distinctive dishes on our menu and a favourite among guests who grew up in Kerala and along the southwest coast.
