Uttapam is the soft, thick cousin of the dosa. The same fermented batter is poured a little deeper on the griddle and finished with a topping of onions, green chilies, tomato and coriander that cooks right into the surface. The base stays pillowy, the top turns golden and sweet, and every bite carries the topping with it.
Where a dosa is spread thin for crispness, an uttapam is left thick so it can stay soft and absorb the topping. We press finely chopped onions, chilies and herbs into the batter while the underside sets, then flip it briefly so the onions caramelise without drying out.
The result is somewhere between a savoury pancake and a South Indian flatbread: filling, gently spiced, and satisfying without being rich. Served with sambar and coconut chutney, it is a great choice for guests who want something more substantial than a dosa but still entirely vegetarian.
Cut it into wedges and eat it topping-side up so you get onion in every bite, dipping each piece in sambar or chutney. If you prefer crisp over soft, order a masala dosa instead.
Uttapam goes well with medu vada on the side, or with a bowl of sambar and idli to round out a South Indian tiffin spread.
Onion uttapam is available for dine-in, takeout and delivery from 761 Daniels Way SW in southwest Edmonton, serving Chappelle Gardens, Desrochers, Paisley and Allard. It travels better than a dosa, which makes it a smart pick for delivery.
A more substantial tiffin dish for guests who want a full meal without meat.
Onions and chilies are pressed into the batter, so the flavour is throughout, not just on top.
Because it is thick and soft, uttapam holds its texture on the way home better than a thin dosa.
